elderflower spritz slushie
This easy, no-blend slushie is the perfect summer cocktail to serve guests! It is light, refreshing, low in ABV, and easy for guests to prepare for themselves!

Inspired by a delicious palate cleansing dish we tried at Timberyard while on our honeymoon in Edinburgh, this drink is liquid sunshine. It is incredibly refreshing and perfect for long hot days. Made from only a few ingredients, the elderflower spritz slushie is great. You simply freeze elderflower liqueur (I use St Germain), lemon juice, and champagne together to create an elderflower lemon granita mixture. Freeze this mixture for about four hours, mixing things up a bit every once in awhile to create some fun texture. Then, scoop a hearty spoonful out of the mixture into a coupe glass, top with champagne and sparkling water, and garnish with fresh mint, a lemon, a lime, or a mixture of all three!

elderflower spritz slushie
Ingredients
- 1 cup champagne
- 1 cup elderflower liqueur (I use St Germain)
- ½ cup lemon juice
- champagne to top
- sparkling water to top
- lemon, lime, or mint to garnish!
Instructions
- Combine the champagne, elderflower liqueur, and lemon juice in a bowl to make the granita mixture
- Freeze mixture for four hours or so, mixing it up a bit a few times to create more interesting textures
- Scoop a large spoonful or two of the elderflower lemon granita into a coupe glass
- Top with brut champagne and sparkling water
- garnish with a lemon, lime, or mint!
